Random Baking

i really dont feel like studying for midterms/doing hw/case studies. so i shall post all the photos from this weekend now! ((:
LAKSA! the boy was pretty set on cooking malaysian style laksa which apparently doesnt have much soup/sauce )): but still loved it. ugh, can someone send me some more laksa packets. i’ll die if it ever runs out!
breakfast inspiration from http://happyhomebaking.blogspot.com/2012/09/weekend-breakfast.html he basically saw that the egg was runny and decided that i’ll like anything with a runny egg yolk so he made this. saturday’s breakfast (think sunday’s one was better, because i made it :p)
sausage+bacon -> a really unhealthy breakfast

finished product. put it into a ramekin, and put an egg on top and bake it for a while

saturday’s lunch was roti jala http://nasilemaklover.blogspot.com/2012/08/roti-jala-net-crepes-and-chicken-masala.html. tbh our roti jala was a failure. look at the link, the net crepes look so nice! we tried all ways using cups with holes etc. but we couldnt make it to look like what it was supposed to be )): but whatever, the curry was nice.. (i made the curry because i gave up on making the crepes into net like shapes, but he gave up in the end too, so we just had normal looking crepes)

made nutella cheesecake for liyenn’s birthday surprise! was too greedy and put in too much oreo cookie crust, and ended up with a 1:1 ratio of crust to cheesecake. panicked and added milk, nutella and whipped cream hoping that it would make it better but it didnt -> it didnt solidify because i added too much milk. ughh.

No Bake Nutella Cheesecakes

For the Crust

12 Oreo Cookies, crushed into crumbs
3 tablespoons unsalted butter, melted

Mesh up the Oreo cookies (i used the blender) and then stir in melted butter. Press it down in your springfoam pan!

For the Filling

8 ounce cream cheese, softened
2/3 cup Nutella
1 teaspoon pure vanilla extract
8 ounce frozen whipped topping, thawed
Use an electric mixer (unless you’re bent on building muscles), beat the cream cheese and Nutella until smooth. Add vanilla and mix. Using a rubber spatula, fold in the whipped topping until well blended and you can’t see anymore white streaks.
Pour it into your springfoam pan. Cover with plastic wrap and refrigerate for at least 2 hours before serving.

it doesn’t look that bad right. it was just 1:1 ratio at the edges! and luckily denise and ruthika were smart enough to make another cake for liyenn. a tiramisu one. and we all had dinner at my place. first birthday of fall semester. i realized most singaporeans have their birthday in spring semester. idk why. like ruthika (i think she prefers to be called indonesian though) and junhao are the only singaporeans with birthdays in fall.

tried this potato bacon and cheese thing at nanjya monja, and made it even more unhealthy by panfrying the potatoes first so that they’ll be crispy!
wonderful weekend ((: next week, 2 midterms + onsite interview then NEW YORK for weekend!!
