Potato Chip Cookies

Reward to self after finishing an essay? BAKING.
made a batch of potato chip cookies! ugh, delicious (self-praise heh). super fattening though, because i was eating the chips while baking & finished the crumbs that weren’t used up )): heres the recipe

Potato Chip Cookies

for 12 cookies
1 stick of unsalted butter
1/2 cup of light brown sugar
1/4 cup granulated sugar
1/2 teaspoon pure vanilla extract
1 egg
1 cup of all-purpose flour (plus about 2 tbsp flour to be exact)
1/2 tsp baking soda
a pinch of salt
2 1/2 cups of crushed salted potato chips (i used ruffles)
Preheat oven to 375F. Beat butter and both sugar at high speed for a minute. Add vanilla and egg and mix at medium speed until combined. Add flour, baking soda and salt and beat on low speed (usually i just mix in the flour with a spoon because using the mixer means flour on my clothes and my lappy). Stir in 1 cup of potato chips. Make 2-inch balls and roll the balls in the remaining 1.5 cup of potato chips to coat. Place the cookies 2 inch apart on the baking sheet. It should take about 20minutes till its golden brown! Let it cool completely on the baking sheet and you get potato chip cookies!
