Nutella Swirl Muffins

decided that going to the gym and feeling better about myself was a good idea before watching the victoria secret show. WRONG. aching so much now )): haven’t been in the gym for 3 months really makes a difference )):

motivation to go to the gym ((: gonna go later + go get my macbook repaired )): ugh, hopefully they don’t make me pay for replacing the top case.. if you haven’t heard, my trackpad died, after water from my hair dripped in )):
but anyways, made nutella swirl muffins on Sunday for this week’s breakfast ((: this is the one where i got greedy and added a hell lot of nutella :p

Nutella Swirl Muffin

makes 12 regular muffins
2 eggs
3/4 c Sugar
1 1/2 c flour
1/4 tsp salt
2 tsp baking powder
1/4 c extra virgin olive oil (or vegetable)
3/4 c whole milk
1 tsp vanilla extract
12 tbsp of nutella!

Preheat your oven to 350 degrees and grease your muffin tin. Beat together eggs and sugar until they look pale. Add the flour, salt and baking powder. Mix in the oil and milk, then stir in the vanilla extract. Scoop the batter into your muffin tin. Spoon a tablespoon or so onto the top of each muffin. Take a toothpick (or chopsticks.. ((: we’re asians afterall
) and swirl the nutella around. Bake it for 12-15 minutes, or until they test done in the center with a toothpick. Remove them to a rack and allow them to cool.
