First Try at Cupcake!

we’re super fail. we just realized today that we’re supposed to fly off tomorrow morning instead of wednesday. lol. have to pack tonight for st maarten and singapore )): and im feeling lazy. grrr
decided to make cupcakes since we bought 2 trays of eggs on saturday )): my first attempt at making cupcakes! quite happy with them. the muffin part is super moist and fluffy ((: and i guess i just like coffee in general, so anything with a hint of coffee tastes awesome to me ((:

Mocha Cupcakes

yields 12 cupcakes adapted from  (browneyedbaker)
1-1/3 all-purpose flour

1/3 cup unsweetened cocoa powder

1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup whole milk
½ cup warm water, dissolve a pack of instant coffee in it (total 3/4 cup of warm water because you need another 1/4 for the frosting)
1 teaspoon vanilla extract
½ cup (1 stick) unsalted butter, at room temperature
½ cup granulated sugar
½ cup light brown sugar
1 egg, at room temperature


Mocha Frosting

1½ teaspoons vanilla extract
1/4 cup of warm water
6 tbsp chocolate chip
1/3 cup butter
1/4 cup sugar (i didn’t use too much sugar because my coffee was already pretty sweet)

Preheat the oven to 350 degrees F. Line a standard-size muffin tin with paper liners. Whisk together the flour, cocoa powder, baking powder, baking soda and salt. Beat the butter and both sugars together on medium-high speed until light and fluffy, about 2-3 minutes. Add the egg and beat until combined. In a measuring cup, combine the milk, brewed coffee mixture and vanilla. Slowly add the flour mixture, alternating with the coffee mixture, ending with the flour mixture. Divide the batter evenly between the 12 liners. Baking for 17-20 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Cool completely before frosting cupcakes.

Mocha Frosting
Melt chocolate chip and butter in the microwave and stir until smooth. Transfer to a mixing bowl and beat in sugar. Add in enough coffee to get the right consistency for pipping. Pipe frosting onto cupcakes!
