Hong Kong Steamed Milk Pudding



Had my “dan lai” cravings last week and made some. Made more today. It tastes so much better so heres the recipe ((:




200g milk (the “fatter” the better, i used 180g 2%fat and 20g heavy cream)

1 egg white

20g sugar


Pour the milk into a bowl and microwave it for 4minutes. Let it cool for 5 minutes. There should be a layer of “skin” formed on top. “Fatter” milk forms better skin. Make a small slit at the edge of the skin and pour the milk out. Leave the skin in the bowl (honestly i don’t care about the skin, i just want it to taste good!). Beat the egg white until it foams. Add sugar and the rest of the milk. Mix well and pour it back into the bowl. Steam for about 10 – 12 minutes, and serve warm.
