Chocolate Chip Scones

I really love this chocolate chip scone recipe of mine. You can switch it up with anything you want, i’ve tried reese chips and blueberries. It only takes up about 20mins including baking time ((:

Chocolate Chip Scones

Ingredients:
1½ cups plus 2 tbsp. all-purpose flour
¼ cup sugar
2 tsp. baking powder
Pinch of salt
1 cup chocolate chips
1 cup heavy cream
1 tbsp. butter, melted

Directions:
Preheat the oven to 375˚ F.  Line a baking sheet with parchment paper or a silicone baking mat.  Combine the flour, sugar, baking powder and salt in a medium bowl; stir to combine.  Toss in the chocolate chips and stir to blend.  Add the heavy cream to the flour mixture, stirring just until a dough forms and the dry ingredients are incorporated.  Knead the dough very briefly to ensure even mixing. Guesstimate and separate the dough into 6 equal pieces and pat them down on the baking sheet. Brush lightly with melted butter and sprinkle with additional sugar/heavy cream (if using).  Bake 15-20 minutes, until lightly browned.

Found this recipe for banana, coffee and chocolate chip scone that tasted so great that the guys finished everything within 2 days. You can kinda gauge how good the breakfast is by how fast the guys finish everything. :p

Banana, Espresso, and Chocolate Chip Scones

makes 8

1/3cup heavy cream
1 large egg
2 1/4 cups all-purpose flour
1/3 cup sugar
2teaspoons baking powder
1/2 teaspoon salt
1 tablespoon coffee powder
1/4 teaspoon cinnamon
1 1/4 sticks (10 tablespoons) unsalted butter, cold and cut into small pieces
1 cup very ripe mashed bananas
2/3 cup semi-sweet chocolate chips 

Preheat oven to 400 degrees F. Place oven racks in top and bottom thirds of the oven. Line two large baking sheets with parchment paper. 

In a small bowl, whisk cream and egg; set aside. In a large bowl, mix dry ingredients: flour, sugar, baking powder, salt, coffee powder, and cinnamon. Add chilled butter, and mix with a pastry blender or fork until a coarse meal forms with tiny pea-sized butter pieces. Mix in bananas and chocolate chips. Add the cream mixture to the flour mixture and, using a spoon, mix until just combined. Do not over mix, or the dough will become leaden. 

Place scones (just divide the dough into 8 approximately equal parts) on parchment paper-lined baking sheets. Bake scones for 20-22 minutes, rotating pans mid-way through. Bake until puffed and golden; transfer to a rack to cool.Camera 360

Chocolate-Chocolate Chip Muffin

so we forgot to get break for breakfast this week — i need to bake something for breakfast! decided on chocolate-chocolate chip muffin because he loved my banana chocolate chip muffin so much. ((: its really moist so it tastes really good even after leaving them overnight.
and its really easy to make too! if i can make it, so can you :p

Chocolate-Chocolate Chip Muffin

Makes 12 muffins
2/3 cup cocoa powder
1 3/4 cup all purpose flour
1 1/4 cup light brown sugar
1 tsp baking powder
1 tsp baking soda
a pinch of salt
1 cup chocolate chips
2 eggs
1 cup milk
2 teaspoon vanilla essence
1/2 cup butter (1 stick)
Preheat oven to 400F. Grease the muffin tin. Whisk the eggs, milk and vanilla. Add in the melted butter, cocoa, flour, sugar, baking powder, baking soda and salt. Use a spoon to stir them until they start to blend. Then use a electric whisk and whisk at medium speed for 1 minute. Stir in the chocolate chips. Scoop about 2 spoonfuls into the muffin tin. Bake for about 15-20 minutes or until a fort inserted in the center of the muffin comes out clean.

Banana Chocolate Chip Muffin

Was so stressed studying econometrics >< 3 midterms next week.. im so dead. )):
needed to relieve stress, so i went to bake! ((: And I declare my Banana Chocolate Chip Muffin a success ((: tehe, i don’t think i’ve baked anything that tasted nicer.. it was so fluffy and nice! ((:

Banana Chocolate Chip Muffin

for 6 yummy muffins:
1/3 cup butter
1/3 cup sugar
1 egg
2 ripe bananas
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup chocolate chips
a pinch of salt
Preheat oven to 350F (this really depends on your oven..). Cut banana into slices, and use a fork to mash them up. Mix butter, sugar, egg, banana, and vanilla together with an electric whisk! Add flour, salt, baking powder, baking soda and mix until you cannot see any flour left. Add in the chocolate chips and just mix using a fork. Either line your muffin tins with muffin cups or butter them. Pour the mixture into your muffin tins. Bake for 25 minutes! And you get super fluffy and yummy muffins. 

Definitely going to make them again because he likes them so much

Browned Butter Salted Chocolate Chip Cookies

Baking stuff from last week!!!

ok. this wasn’t really baking. it looks like milo, but its really hot chocolate! posted the recipe some time ago.. it was so cold and windy (hurricane sandy) and so i made hot chocolate!! and tk’s lactose intolerant so i had to finish the entire thing by myself )): it was really really good. its so easy to make hot chocolate! O.O



he made tandoori chicken. “from scratch”. apparently you have to add yogurt to instant paste, and he calls that from scratch. but it was so good though ((: but it made the whole house smell indianish



BAKING!!!! made browned butter chocolate chip cookie. it was legit good (maybe a tad salty since i halved the recipe and forgot to half the salt. tehe!) have to find a recipe that uses ghee (i dont think theres any) but tk thinks ghee tastes better, and we still have half a bottle lying around, so… ghee it is for the next batch of cookies ((: adapted from bakeorbreak

Browned Butter Salted Chocolate Chip Cookies

1 cup unsalted butter
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 cup brown sugar
3/4 cup granulated sugar
2 eggs
1 tablespoon vanilla extract
2 cups chocolate chip (this is quite a lot, reduce it if you want to)

Preheat oven to 350F. Heat butter over medium heat and cook until you see brown specks on the bottom of the pan (you’ll know it when you smell something nutty). Cool to room temperature. Whisk flour, baking powder and salt. Use an electric mixer to beat butter, brown sugar and sugar until fluffy. Add eggs one by one and mix in between. Add in vanilla extract. Add in the flour mixture slowly and mix. Mix in the chocolate chips. Drop the dough by using tablespoons. Bake for 10-12 minutes or when you deem fit. Cool for 5 minutes and there you go!




and i brought the cookies to stats lab today (kinda my breakfast) and my TA was saying how hes so disappointed in us because no one gave him food/cookies (i swear he saw my cookies and got hungry, and decided to say that) then i decided to bribe him with my cookie to help me with my lab!! ((: but i still didn’t finish my lab in the end.. )): i swear its sooo difficult. inez and i literally give help each other with our code and we still can’t finish it. GRRRR
